  • 1 cup shredded cheddar cheese melts well and creates gooey core
  • 1/2 cup cooked pumpkin or sweet potato adds seasonal sweetness and color
  • 1/2 cup spicy cooked sausage or seasoned beans for vegetarian option
  • 1/2 cup black beans drained and rinsed

  • to taste salt and pepper season fillings
  • as needed sour cream for serving

Equipment

  • Skillet or frying pan
  • Spatula
  • Knife
  • Cutting board

Method

  1. Preheat your skillet over medium heat until it feels warm and you can hear a gentle sizzle when a drop of water is flicked onto it.
  2. Lay a tortilla flat on a cutting board and evenly sprinkle a generous layer of shredded cheese over half of it, creating a cheese base for the fillings.
  3. Add spoonfuls of cooked pumpkin or sweet potato, spicy sausage, and black beans over the cheese, spreading gently to fill the tortilla without overloading.
  4. Fold the tortilla in half over the fillings, pressing gently to seal the edges and help prevent spilling during cooking.
  5. Carefully transfer the folded quesadilla to the preheated skillet and cook for about 3–4 minutes, until the bottom is golden brown and crispy, with cheese starting to melt.
  6. Use a spatula to gently flip the quesadilla and cook for another 3–4 minutes, until the second side is also golden brown and crispy and the cheese is fully melted inside.
  7. Remove the cooked quesadilla from the skillet and place it on a cutting board; let it rest for a minute to settle and avoid cheese spillage when slicing.
  8. Use a sharp knife to cut the quesadilla into wedges or slices, revealing the melty cheese and colorful fillings inside.
  9. Serve warm with a dollop of tangy sour cream and enjoy the crispy, cheesy, and spicy flavors that make this dish perfect for Halloween fun.

Notes

Feel free to customize fillings with other seasonal ingredients or spice levels. Ensuring the pan isn't overcrowded helps keep the quesadillas crispy and golden.
