Ingredients

  • 1 cup marinated artichoke hearts rinsed and chopped
  • 2 cups frozen spinach thawed and squeezed dry
  • 8 oz cream cheese softened at room temperature
  • 1/2 cup sour cream
  • 1/2 cup Parmesan cheese grated
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Mixing bowl
  • 9-inch baking dish
  • Spoon or spatula
  • oven
  • Cooling rack

Method

  1. Preheat your oven to 180°C (350°F). In a mixing bowl, combine the chopped artichokes, thawed and well-squeezed spinach, softened cream cheese, sour cream, grated Parmesan, shredded mozzarella, minced garlic, salt, and pepper. Mix until well blended and creamy.
  2. Transfer the mixture into a 9-inch baking dish, spreading it out evenly with a spatula. You can sprinkle a little extra shredded cheese on top for a crispy crust.
  3. Bake in the preheated oven for 20 to 25 minutes, or until the dip is bubbling around the edges and the top is golden brown. The aroma of garlic and melted cheese will fill your kitchen.
  4. Once baked, remove the dish from the oven and let it rest on a cooling rack for about 5 minutes. The dip will set slightly and become even more deliciously gooey.
  5. Serve the spinach artichoke dip warm, with crusty bread, chips, or vegetable sticks for dipping. The top should be crispy, and the center irresistibly gooey and cheesy.

Notes

For an extra kick, stir in a dash of hot sauce before baking. Squeeze out all excess moisture from the spinach to avoid a watery dip. Feel free to customize with additional herbs or veggies for variation.
