Ingredients

  • 1 cup rolled oats
  • 1 cup pumpkin puree preferably organic or homemade
  • 2 cups milk dairy or plant-based
  • 2 Tbsp brown sugar or honey/maple syrup to taste
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger optional for extra warmth
  • 0.25 tsp ground nutmeg optional
  • Pinch salt

Equipment

  • Saucepan
  • Wooden Spoon

Method

  1. Pour the milk into a saucepan and bring it to a gentle simmer over medium heat, filling the kitchen with a warm, milky aroma.
  2. Add the rolled oats to the simmering milk, stirring continuously to prevent sticking and clumping.
  3. Scoop in the pumpkin puree, stirring it in thoroughly to create an even orange hue and smooth texture.
  4. Sprinkle in the cinnamon, ginger, nutmeg, and a pinch of salt while stirring, allowing the fragrant spices to meld into the mixture.
  5. Add the brown sugar, stirring until fully dissolved, and let the mixture simmer gently for about 10 minutes, until the oats are tender and the porridge has thickened.
  6. Remove the saucepan from heat and let the oatmeal rest for a minute to settle and cool slightly.
  7. Scoop the pumpkin oatmeal into bowls, and top with nuts, seeds, or additional cinnamon if desired for extra texture and flavor.

Notes

Adjust sweetness and spice levels to taste. For creamier oatmeal, stir in a splash of cream or additional milk before serving.
