Ingredients

  • 1 cup peanut butter natural, slightly oily for richer flavor
  • 1 cup brown sugar adds caramel notes and moisture
  • 1 large egg or flaxseed/chia for vegan option
  • 1 teaspoon vanilla extract optional for depth of flavor
  • 1/2 teaspoon baking soda for slight rise and chewiness
  • 1 cup chocolate chips semisweet or dark preferred
  • 1/2 cup chopped peanuts optional for extra crunch

Equipment

  • Mixing bowls
  • Baking sheet
  • Parchment paper
  • Cooling rack

Method

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, brown sugar, and egg. Mix with a spoon or spatula until the mixture is smooth, thick, and slightly glossy, with no streaks of sugar remaining.
  3. Add the vanilla extract and baking soda to the bowl, then stir until evenly incorporated. The dough will start to thicken and become more cohesive.
  4. Fold in the chocolate chips and chopped peanuts, distributing them evenly through the dough. The mixture should be sticky and slightly chunky.
  5. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  6. Bake the cookies in the preheated oven for 10-12 minutes, until the edges are golden brown and the centers look slightly soft but set.
  7. Remove the baking sheet from the oven and let the cookies sit for 5 minutes, allowing them to firm up slightly.
  8. Using a spatula, transfer the cookies to a cooling rack to cool completely or enjoy warm for gooey chocolate goodness.
  9. Once cooled, serve your cookies with a glass of milk or simply enjoy their rustic charm on their own.

Notes

For best results, chill the dough for 30 minutes before baking to prevent spreading. You can also freeze dough balls to bake fresh cookies anytime.
