  • 1/2 cup honey or maple syrup
  • 2 cups old-fashioned rolled oats
  • 1 cup chocolate chips dark or milk chocolate

Method
 

  1. Line your 9x9 inch pan with parchment paper, leaving a slight overhang for easy lifting.
  2. In a microwave-safe bowl, melt the butter and peanut butter together in 30-second bursts, stirring after each, until the mixture is smooth and fragrant.
  3. Add the honey to the melted mixture and stir until fully combined, creating a glossy, sticky blend.
  4. Pour the oats into the bowl and fold them into the peanut butter mixture until evenly coated and sticky.
  5. Press this mixture firmly into the prepared pan, spreading it out evenly with a spatula to create a compact base.
  6. Place the pan in the fridge and chill for at least 30 minutes, allowing the base to set and firm up.
  7. Once the base is firm, melt the chocolate chips in short bursts in the microwave, stirring until smooth and glossy.
  8. Pour the melted chocolate over the chilled base, spreading it evenly with a spatula for a shiny, smooth top.
  9. Return the pan to the fridge and chill for another 15-20 minutes, or until the chocolate is set and glossy.
  10. Once the chocolate is firm, lift the bars from the pan using the parchment overhang and cut into squares.
